Halloween Fun...and so much more

So first off here we have cute little Megan! She is starting to sit up and is getting to be so much fun because she is really interactive. The only down side. She hates sleeping longer than 45 minutes at a time...Any suggestions would be greatly appreciated.



The kids did Halloween houses with their friends that come over every week. Paul just ate the candy. Love IT!!!



Meet Jack...our family Jack-O-Lantern this year. We had a blast carving him and making pumpkin seeds for FHE.

Finally Fall

I don't know about anyone else but I have been longing for fall weather. We went from 90 degrees to about 40 overnight it seems like. But finally it is here. The leaves have fallen the crispness is in the air and I am enjoying every minute of it. Granted the weatherman says that next week it will be in the 40's again but I am enjoying the weather for now.







It is amazing what can happen with a pile of leaves and three kids.

This little kid is SO fun. He doesn't limit his jumps to just pillows either. Every morning our kids start their days by wrestling each other. I will have to get some video of that for you.

Chicken Torpedoes

So a little while ago Scott went down to Texas for the BYU Oklahoma game. GO COUGARS! And after coming back he raved about what he had at a restaurant down in Texas so what did he do? That's right he made up a recipe to eat it. He had something called Chicken Cigars but I figured if we were going to put them into our recipe rotation I wanted to call them something else so low and behold...Chicken Torpedoes.

Here's what he did

Put
Shredded Chicken
chopped sun dried tomatoes
chopped jalapeno slices
parmesan cheese
shredded cheese
some seasonings
and a little bit of ranch to hold it all together
in to a partially cooked flour tortilla
Then we flash fried it to make it crispy.

He also made a three cheese ranch to dip them in. I couldn't begin to tell you how to make that.

Then as a side dish he made these mashed potatoes with
potato
corn
sun dried tomato
red bell peppers
jalapeno
seasonings

If you want actual amounts I am sorry, he just kind of throws things together.

Scott said it tasted just like the restaurant food. If you are looking for something new to try, these were SUPER GOOD! Here are some pictures of his creation.
